Facing increasing competition from mainland China, Hong Kong restaurants are moving away from traditional Chinese dining in a bid to stay competitive. Maxim’s restaurant group reported a 7-8 per cent drop in foot traffic since the border between the city and mainland reopened after the pandemic and a growing number of Hongkongers started heading north for
